Back of the fridge pizza bread

This is a great way to use all those ends of bread and frozen loafs you’ve forgotten about… it’s also super easy to make gluten free or vegan by using GF bread or leaving out the cheese.

Ingredients

  • As many slices of bread as pieces of pizza you want to make
  • Any jar of tomato-based pasta sauce, tinned tomatoes or even ketchup.
  • 50-100g of grated cheese per slice (Though you can use whatever cheese you’ve got)
  • Whatever veg you’ve got. Red Onion, courgette and peppers are particularly delicious

Directions

  1. Pre-heat you grill, line a baking tray with tin foil to catch those blobs of molten cheese.
  2. Lightly toast your slices of bread, this will help avoid a soggy bottom
  3. Put your sauce on and spread evenly across the bread, then your toppings and finally smother with cheese – try to leave a gap between the cheese and the slices of the bread, this will create a crust and prevent cheese loss.
  4. Cook for a minute and then check – your grill cooks things incredibly quickly, so be careful! Cook until golden brown and melty with brown blisters.
