
Smokey Bacon Beans & Crispy Jacket Potatoes

Ingredients
- 1 tbsp olive oil, plus extra for drizzling
- 1 small onion, sliced
- 1 small red pepper, thinly sliced into strips
- 3 x garlic cloves, halved & crushed
- 2 x 227g can chopped tomatoes
- 1 tsp smoked paprika
- 2 tsp red wine vinegar
- 2 x 210g can butter beans or chickpeas or any other bean you like, drained.
- 1 tsp sugar
- 4 x jacket potatoes + olive oil to rub
- Some grated cheddar o
- 4 x slices of smoked bacon, chopped (optional)
- Chopped parsley or chives to garnish
Directions
Get your jackets on
- Heat the oven to 220c fan or 200c (gas mark 7)
- Rub a little oil over each potato and put on the top shelf of the oven
- Bake for 20 mins
- Then turn down the oven to 190c for fan or 170c (gas mark 5) and bake for 45mins – 1 hour more until the skin is crisp and the inside soft.
Make your baked beans
- Heat the oil in a small pan
- Add the bacon, onion and pepper
- Fry gently until soft, for about 10-15mins
- Add the garlic, tomatoes, paprika, vinegar, beans, sugar and sallt & pepper to the pan.
- Bring to a simmer and cook for 10-15 mins or until slightly reduced and thickened
Ready for the plate
- Cut and butter your crispy jacket potatoes
- Fill with beans and garnish with cheese, parsley and chives.
