Anything goes salsa & homemade tortilla chips

We sometimes think that if a tomatoes’ gone too squishy, or an onion has started sprouting or a wrap has gone stale, we have to throw it away… But we don’t! We can turn it into tasty dip, with homemade crisps to dip in it.

Ingredients

For the salsa

  • 3 tomatoes wit htops cut off – you can even make this with tinned tomatoes
  • 1 onion and colour will do but red is tastier
  • 1 large bulb of garlic, peeled
  • 1 big handful of fresh coriander – but you could use parsley or bail, even a tablespoon of dried herbs
  • The juice and zest of 2 limes – but you could use lemons or even a splash of orange juice or shop bought lemon juice
  • 1 tsp of salt
  • A pinch of sugar
  • 1 tsp of olive oil or vegetable oil
  • 1 deseeded chilli or a pepper if you don’t like it spicy

For the tortilla chipsĀ 

  • 2 tortillas cut into 8 triangles
  • 2 tbsp of vegetable oil or olive oil
  • Salt to sprinkle on at the end

 

Directions

For the salsa

  • Cut all your veg as small as possible
  • Now, either put in your food processor, or a bowl to be whizzed or mashed
  • Add your lime juice and oil
  • Blitz in the food processor until a chunky dip, or else whiz or mash until the same

For the tortilla chipsĀ 

  • Pre-heat the oven to 180c
  • Coat all the slices of tortilla in the oil, in a bowl / on a baking tray
  • Place on a baking tray so that there’s a little space between them
  • Cook for 6-10 minutes, or until golden brown
  • Place on a kitchen towl to absorb excess oil, then sprinkle with salt
